Best Soup EVER!!

So last night I whipped up soup and croque messieurs for my usual Thursday guests and was surprised at how well it turned out. My husbands friend Arrien got me one of those Kitchen Aid blendy wand things and I have to admit I have found every excuse possible to use it. If you like your cream of whatever soups more rugged and less pureed just blend it less...or don't get a super awesome addictive blendy stick of death.

Potato Leak Soup
-4 cups chicken broth
-3 big potatoes
-1/2 pack of bacon
-3 leaks
-1 onion
-4 cloves of garlic
-parmesan cheese-1/4 cup
-one small container of 15% cooking cream

Dice up the potatoes and boil them in the chicken stock. While that is boilling spread your bacon out on a cookie sheet and bake at 375 for about 15 minutes.

When the bacon is crispy drain the fat into a pan and set the bacon aside. Cup up the onion, leak and garlic and caramelize them in the bacon fat (yeeeesssss!). Add that, the cream and the bacon to the potato stock pot and buzz blend the hell out of it. Let it simmer ten more minutes and add the parmesan. Serve.
